120 gr unsalted butter (room temp.)

90 gr. powdered sugar

30 gr. almond flour

235 gr. all purpose flour

2 gr. sea salt

1 whole egg

1 tsp vanilla extract

Ganache chocolate

100 gr. heavy whipping

150 gr. dark chocolate

Preheat oven to 350 degrees F.

In an electric mixer, cream softened butter, powdered sugar and salt until light and fluffy.

Add egg and vanilla.

Add flours until combined.

Begin rolling the dough to a 2-3mm thickness. Cut the cookies to different shapes. Bake for 15 min or until just light brown. Let them cool. Prepare the ganache by heating the cream in a saucepan until it starts to simmer. Add dark chocolate and mix to achieve a ganache consistency. Fill the cookies and cover to sandwich each. Dust with powdered sugar (optional). Enjoy!
