A timeless Flan Recipe

A classic flan recipe that we continue to make time and again!

4 whole eggs
2 egg yolks
2 cups of whole milk
1 condensed milk can
3 teaspoons of vanilla extract
1 teaspoon salt
2 cinnamon sticks
The peel of half lemon
For the Caramel
1 cup of caster sugar
Use a saucepan to pour in the milk, add the lemon peel, salt and cinnamon sticks and heat to simmer. Avoid boiling. Let it rest for 20 min to infuse.
Whisk the eggs, egg yolks and condensed milk. Add vanilla extract.
Prepare the caramel. Heat the sugar until reaching a caramel consistency and a light brown hue.
Evenly divide the caramel into each mold. It yields 8. When the milk is at room temperature add the eggs mixture and remove the lemon peel and cinnamon sticks. Divide the mixture into each molds and bake in a bain-marie at 350 degree F. for 30 min or until set. To serve invert the molds and serve. Enjoy!
